Easy Lemon Mustard Vinaigrette Recipe

My Grandma’s mustard lemon vinaigrette dressing is an old fashioned mustard salad dressing that has always been a family-favorite. It’s tangy and as sweet (or not) as you want!
Prep Time: 10 minutes 
Equipment
  • Measuring cups and spoons
  • salad dressing holder or resealable container or bowl and whisk

Ingredients

  • 2 tablespoons onion, grated
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon Dijon mustard
  • 3 tablespoons white wine vinegar or red wine vinegar
  • 1 teaspoon lemon juice
  • ¾ cup olive oil
  • 1-2 tablespoons honey, to sweeten, if desired

Instructions

  • In a medium sized bowl, salad dressing or resealable container whisk together onion, mustard, salt, pepper and vinegar.
  • Slowly whisk in oil. When combined add and blend in lemon juice. Refrigerate until needed. Enjoy with our asparagus salad or salad of your choice.

Notes

Whisk uniformly but vigorously as you slowly add the oil to get the best emulsification.

Don’t be alarmed if your vinaigrette solidifies in the refrigerator. It’s totally normal. Just take it out and let it warm a bit to thin it out.

For the best flavor, stick with Dijon mustard and fresh lemon juice

STORAGE

Refrigerator: Store in an air-tight container for up to 2 weeks. You may want to sit it out on the counter for a few minutes before serving as the refrigerator makes the olive oil seize up a bit. Then shake it up and it’s ready to serve!

SUBSTITUTIONS AND VARIATIONS

Dijon Mustard: Use yellow or a combination of mustard (including grainy mustard) if desired. My husband uses maple mustard which works out great.
Olive Oil: Grapeseed, avocado oil, or another vegetable oil will work instead.
Honey: Swap for maple syrup or another liquid sweetener. Enjoy how it adds to the flavor of your dressing.
Spicy: Add a few chili pepper flakes, harissa, sriracha, a teaspoon of homemade hot pepper sauce or your favorite hot sauce, or add a little of our jalapeno powder, smoked jalapeno powder, or chipotle powder to add some heat.
